I love the Food Network. Yesterday I watched Paula Deans Homecooking and she made such simple cookies! They looked way good too but since I am on a diet I can't make em. Oh well. 1 cup peanut butter, creamy or crunchy
1 cup sugar (can aslo use Splenda)
1 egg
1 teaspoon vanilla extract
Directions:
Preheat the oven to 350 degrees F. Grease a large baking sheet.
In a mixing bowl, combine the peanut butter, sugar, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some suger if you'd like. Cool slightly before removing from pan. I think a Hershey's Kiss would be yummy in the center instead of criss cross.. but whatever!
Also, another easy cookie recipe is: a pack of spice cake mix, a can of pumpkin and chocolate chips all mixed together. Put balls on baking sheet. 350 for 7 to 9 mins.
Yet, another: A package of any cake mix. 2 Eggs and 1/3 cup of oil, chocolate chips (any flavor). Mix together. Place balls on pan. 350 deg. for 7 mins.
TADA! Sounds yummy huh!?!

I just love easy cookie recipes. I like hard ones too, because I just love cookies in general, but easy ones get made more. Yum! Thanks for sharing.
